Ingredients
- 230g Butter 100g Granulated Sugar 200g Light Brown Sugar 3 tsp Vanilla Extract 2 Eggs 1stp Cornflour 1/2 tsp Salt 1 tsp bicarbonate of Soda 312g Plain Flour 125g Peanut Brittle, crushed
Method
- In a mixing bow, beat the butter until smooth and creamy
- Add the sugar and beat until fluffy and light in colour
- Add the vanilla extract and eggs and beat until combined
- Add in the cornflour, salt and bicarbonate of soda, flour and mix thoroughly
- Fold in the peanut brittle
- Chill the mixture in a refrigerator for at 3 hours or overnight
- Sit the cookie dough at room temperature for 20 minutes
- Scoop the dough and roll into 1 tbsp balls and place on a lined baking tray, leaving a good distance between each piece to spread
- Bake in a pre-heated oven for 10 minutes at Gas mark 4 / 350°F / 177°C
- Transfer to a baking rack to cool completely
- Serve
