Dairy Free Peanut Brittle
Another feat of hand stretched crunchy brittle mastery, packed with nibbed peanuts and finished with rock salt. But made with a homemade ‘butter’ from a secret Fudge Kitchen recipe, including coconut oil and soya milk (we’re saying no more); making this baby dairy free and vegan friendly too … but you’d never know it.
Without giving too much away, the perfect brittle is made in small 7kg batches and is poured onto marble tables, where it is stretched by hand for 15 minutes as it cools, to achieve the perfect thinness and optimum snap. The entire process takes an artisan confectioner a full hour.
